I decided to create a skin for the Brute Pony vehicle. I suggest downloading Vanillaworks Extended, as it will automatically create a mods folder. Inside Open IV, navigate to Mods>Update>x64>dlcpacks>vwe>dlc.rpf>x64>levels>gta5>vehicles>vwereplacements.rpf and locate pony.ytd. Replace "pony sign 1" with this skin, and you're all set.
